Pressure Cooker (Hardcover - Jan, 2004)
Author: Lorna J. Sass
I'm willing to bet these are excellent, easy to follow cookbooks. I'm basing my opinion on a vegetarian cookbook by the same author. Also see the customer reviews and her other books on Amazon.com. Most are very highly rated.

The Daily Bean (Paperback -

175 Easy and Creative Bean Recipes for Breakfast, Lunch, Dinner....and, yes,
Dessert!
Author: Suzanne Caciola White
This book is high on my list when advising my nutritional counseling client to
include more fiber in their diet. Yes, I always get the look that says "Oh! What
about the gas?". Fortunately, the author includes several suggestions for
"circumventing" that issue.
The recipes themselves are delicious and easy.
You'll be pleasantly surprised by the tastiness of the desserts.
