Denise's Light And Fluffy Protein Pancakes - 2 servings (Six 5 inch pancakes)
Equipment
Egg beater, Large bowl, spatula, Frying pan.
Ingredients
4 Egg whites
1/4 Cup Teff Flour
1/4 Cup unsweetened Soymilk (Silk - green label)
1 tbsp Canola oil for pan
1 small "golden delicious" apple - thinly sliced
INSTRUCTIONS
Place egg whites in a large bowl. Beat until stiff peaks form. Gently mix in the Teff flour and unsweetened soy milk.
Using your spatula, spread the canola oil evenly across the bottom of your frying pan. The pan will be hot enough when a drop of cold water sizzles briskly. The oil should not smoke though.
Pour the frothy batter to 5 inch rounds (1/2 cup batter). Let the pancake set; until most of the bubbles on top are burst (about 3-4 minutes). Gently slip the spatula under the edge of the pancake, then turn over the pancake to cook the other side (about 2-3 minutes).
Brown the apple slices along the side edges of your pan

VARIATIONS:
- serve with maple syrup
- add a 1/2 cup blueberries to your batter for additional color and fiber (2gm)
- you can substitute "Garfava Flour" for the Teff Flour. Both are high protein flours. Teff is made from a tiny grain and Garfava flour is a combination of chick pea/garbanzo bean flour and fava bean flour. Each can be found health food stores. I use Bob's Red Mill Brand.
