Basic Marinade

No cooking is required for this one. This recipe is extremely versatile. The key to a marinate is to allow the food to steep for long enough. Overnight is ideal.

 

EQUIPMENT

Large mixing bowl (glass or stainless steel preferred), whisk or fork

INGREDIENTS

1/4 cup Bragg's Amino Acids

1/2 cup Water

2 tablespoons Vegetable oil

1 teaspoon Prepared mustard

1/4 cup Apple Cider vinegar

2 tablespoons pure Maple syrup

INSTRUCTIONS

Mix together in the bowl. Makes enough for 1 block of tofu or 2 chicken breasts

VARIATIONS/TIPS

You can easily adjust the above ingredients according to your taste preferences. Powdered ginger lends an Eastern edge to this recipe. Powdered or chopped garlic, or onion flakes can also be added for yet a different taste.

Denise's Easy Vinaigrette

No cooking is required for this one.

It doesn't get much easier than this. Add other flavors as you see fit.

EQUIPMENT

small bowl (glass or stainless steel preferred), fork

INGREDIENTS

1/2 teaspoon balsamic vinegar

1/2 teaspoon 100% maple syrup

1    teaspoon Extra Virgin Olive oil (or your choice of vegetable oil)

1    teaspoon cold Water

INSTRUCTIONS

Mix together in the bowl then pour over your green salad.

Don't fret about these calories, most of them wind up at the bottom of your salad bowl.

VARIATIONS/TIPS

Add scallion tops (cut them up with scissors). Sprinkle dried dill weed on your salad.

Denise's Simplest Fruit Vinaigrette

No cooking is required for this one. Perk up the flavor of summer fruit (watermelon, berries)

Enough for one serving of 2 cups cut up fruit.

 

EQUIPMENT

Large mixing bowl (glass or stainless steel preferred), whisk or fork

INGREDIENTS

1/4 teaspoon balsamic vinegar

1/2 teaspoon pure Maple syrup

1    tablespoon water

INSTRUCTIONS

Mix together in the bowl. Drizzle over cut up fruit.

VARIATIONS/TIPS

Great when the flavor of the melon isn't quite sweet enough, like at the very beginning or end of season.

For a no-calorie version substitute a very small amount of stevia (liquid or powder)

5 Minute Yogurt Dill Dip

Whip this dip up in a jiffy for your next party!

Equipment

Blender

Ingredients

1 pint fat-free plain yogurt

1 teaspoon dried dill weed

1/2 teaspoon maple syrup

1/2 teaspoon white vinegar

INSTRUCTIONS

Blend all ingredients until smooth

 

VARIATIONS/SUGGESTIONS

For a spicier flavor add 1 teaspoon dijon mustard and omit the vinegar.

Taste of the East Carrot-Ginger Dressing

Try this on your next summer salad!

 

EQUIPMENT

Food processor or blender, chopping knives, vegetable parer

INGREDIENTS

 

1 inch Fresh ginger - finely chopped

2 large carrots

1 teaspoon maple syrup

INSTRUCTIONS

Place all ingredients into the food processor or blender. Process or blend until all are minced

VARIATIONS/TIPS

- In addition to vegetables, add thin rice noodles. These cook in about 3 minutes.

- You may want to add more spices at cooking time (dill, pepper, Braggs Aminos Acid)

3 - edamame is soy bean. You can find it fresh frozen in the shell or unshelled.
